BECA® Propagation: Yeast Propagation
AI in Yeast Propagation at BECA® has been in use since 2015 for vitality and yield

Targeted, safe, and gentle yeast propagation is crucial for your product. To ensure quality while reducing operating costs, the intelligent, self-learningBECA® propagation control systemis indispensable. The pressure to ensure cost-effective production requires breweries to automate the propagation process—achieving reproducible results of the highest quality—and to integrate sterile, automatic inline yeast dosing into the propagation process as a direct component of the system.
WithBECA® Propagation, brewers can sit back and let the system handle the optimal propagation process and fully automated dosing—reproducible, with precise cell-count accuracy and sterile, with complete confidence.

The most important factors for yeast vitality are:
-
Oxygen Supply: A targeted supply of oxygen, appropriate for the respective growth stage, is necessary for yeast growth, the maintenance of the cell membrane, and the synthesis of essential components such as fatty acids and sterols. Too little oxygen leads to a loss of vitality, while too much can cause oxidative stress.
-
Nutrient supply: Nitrogen (e.g., free amino nitrogen compounds, FAN), phosphorus, and essential vitamins (especially vitamin B1/thiamine) are particularly important for the yeast to produce proteins and enzymes for metabolism. A nitrogen deficiency significantly reduces vitality and fermentation performance.
-
Temperature: The temperature during propagation must be carefully controlled and appropriate for the stage of propagation and growth. Temperatures that are too high or too low stress the yeast and reduce its reliability and viability.
-
Sugar concentration: The concentration of easily utilizable sugars in the propagation medium affects proliferation and vitality. Concentrations that are too high or too low lead to stress responses or poor cell division.
-
Ethanol concentration: Rising alcohol levels have a toxic effect on yeast cells and can lead to a decrease in vitality or cell death.
-
pH level: A pH level that is too low or too high in the medium can cause stress and damage the yeast.
-
Byproducts or foreign substances: Toxins, such as those produced by foreign yeasts (“killer yeasts”), and an accumulation of metabolic byproducts can weaken the yeast and thus reduce its vitality.
Optimally managedBECA® propagation/yeast propagationtherefore focuses on continuous, self-learning management that takes the growth stage into account and minimizes stress.
Superior technology in cost-effective designs for: the brewing industry, medium-sized breweries, private breweries, and microbreweries.
The system includes the BECA Bio-Propagator module, available in various versions (see below), as well as one or more yeast propagation tanks for either continuous or batch propagation/yeast cultivation.
